The gang gobbled up my single batch yesterday, so I made a double batch just now. It's an amazingly comforting recipe and I hope you get the chance to try it some chilly day. Hint: extra garlic and a bit of cayenne give it a little heat, which feels good if you're sick...or even if you're not.

Try butternut squash and green apple soup. We are all pretty much omnivores, but focus mainly on chicken and fish. We occasionally eat pork, but almost never beef. The soup is hearty and filling without being heavy and everyone I know who has had it loves it. I can send the recipe if you want...

OK it's pretty basic:
1 large butternut squash, peeled, seeded and cubed.
1 onion, cubed
2 cloves garlic
2 granny smith apples, peeled, cored and quartered.
Roast them all in the oven until the squash is tender (the apples will be mush) about 40 minutes at 400. Put them in a pot and blend with chicken stock (Trader Joe's organic free-range of course) using a hand blender. I usually use an entire 4-cup box.
Salt to taste, voila! There's your soup.
One option I like with this is to add a small dollop of plain yogurt (greek even if you want) in the center of the bowl after you serve it so you can get a little taste of tangy with each spoonful of the sweet hearty soup.

Oh yeah, you can skip peeling the apples and just scoop out the mush from the peel after they are done roasting if you want.

You might need to extend the recipe since there are not usually any leftovers and you are feeding 6 instead of 4. My girls can be big eaters though so you never know. They are pretty big :)
