Food: Revelation! Baked Kale Chips are Crazy-Delicious

After the Publican pigout last Saturday night, I was thinking about carbs and what they do to/for people.   Since I view life as a neverending series of self-experiments, thought I'd try eating meat (including the fat) and low-carb, high-nutrient vegetables to see what would happen (quasi-paleo?).  Some kale followed me home from the store as a result.

Kale is scarily nutritious and an old culinary pal of mine (in Colcannon, for example) - but today I wanted something different, so I test-drove this super-easy Baked Kale Chips recipe.  As advertised, they turned out astoundingly crispy and delicious, the experience channeling potato chips with a hint of toasted nori seaweed.  A fun conversation starter at a cocktail party, for sure.  Can't eat just one; in fact as of this writing, the whole bowl is nearly gone. Need to make more for the return of the Three Vegetarians from school...okay, now they're totally gone.  But I just ate a whole fracking bowl of kale! I feel better than James Brown!

I am definitely going to have to try this one. We are not big meat eaters, once or twice a year at most. However we belong to a CSA (Community Supported Agriculture) where we get kale on a regular basis.

Hope you like them - I made a second batch tonight that I had to cook slightly longer so that they were crispy. Enjoy :) - plus that colcannon recipe link is really good too, to use up kale!
